The New Year

The Addams Family looking into a storm

Welcome to 2015 Lushies!

2014 has been a generally crappy one for myself, starting with a serious back injury and ending in a genuine shitstorm. As they say, blessings in disguise; hopefully these gale-force winds will be launching me into something better.

Stay tuned!

Friday's Awesome Five

Happy Independence Day Lush Scouts! It just so happens that the 4th coincides with a Friday this year (heeeeey three day weekend!), so I thought it would be an appropriate time to sit down and take the time to talk about some of my favorite things from the past couple weeks.

1. I've been listening to a lot of Angel Olsen lately. I was introduced to her via this great performance on David Letterman. She sounds similar to Courtney Barnett, but with a smidge more blues. I enjoy that I can often listen to her and pick out influences. Go ahead, give it a listen:

2. I've been watching the SHIT outta the FIFA World Cup. I watched almost ever match of the last cup, and while I haven't been quite up to that standard this time, I have watched every USA match and streamed several other while at work. Besides rooting for the USA, I watch for the gameplay, not because I really want any specific team to win. I witnessed our great game against Ghana and our amazing game against Portugal (minus the last 2 minutes). I saw the losing match with Germany that put us through to the round of 16, and heard my coworkers make the saddest noise ever as we lost against Belgium. I look forward to the next cup, because while we didn't necessarily have the hustle and cohesion we needed to really break out of this cup, we played well and played with courage and heart. Not to mention that Tim Howard is basically a God (and as a former Goalie, I definitely admire his ability to save ALL the things.)

3.  I'm super excited about the newly introduced program by Google, Made With Code, mean to introduce and excite girls about coding and computer science. As a kid who taught herself HTML at a young age, I wish something like this had been available to me at the time. I am however, going to be learning some more coding, to make up for lost time (obviously), through CodeCademy's free lessons. Better late than never, right? But regardless, I intend on introducing my sweet little niece to this, because code is rad.

4. Look at this great scarf! I love flamingos as a motif and they're so subtle in this. Also, it's an infinity scarf, so really no way to go wrong! I've been acquiring flamingo items at a rapid pace this summer, so I may look into investing in this one as well.

5. I went with my boyf to see The Grand Budapest Hotel last weekend and it was AMAZING. It may have displaced The Darjeeling Limited as my favorite movie. It had everything I love about Wes Anderson films, plus more action, more vulgarity, and a Czech/Austrian/Sudenten influence. It immediately made me homesick for Vienna and I felt overwhelmed with nostalgia on several occasions throughout the film. Even the boxes from the movie's iconic bakery "Mendl's" reminded me of the similarly pink boxes from Konditorei Aida found throughout Vienna.

Have a great holiday Lushies. May you keep your fingers away from fireworks, your belly full of burgers, and may you not get so drunk you humiliate yourself.

I just bought me a brand new box of matches,

Berry Grapefruit Mimosa Popsicles | Get Lush (4th of July Style!)

Are you ready for the weekend Lushies? It's a three-day-er, thank you national holidayyy! In honor of this fabulous occasion, I've whipped up a cool and bubbly treat: Berry Grapefruit Mimosa Popsicles. This easy alcoholic popsicle recipe was partially inspired by the anniversary mimosas I enjoyed this weekend (and the leftover grapefruit juice in the fridge), and partially inspired by a desperate search for lush but easy red-white-and-blue-ish coloured food items.

All you need is the following:

Champagne
Ruby Red Grapefruit Juice
Strawberries
Blueberries
Popsicle Molds

blueberries and strawberries

Assemble patriotic food items. The popsicle molds could really be any variety. I just so happen to have the two dollar version from Ikea (you'll notice they're the same as Gu's), but these ring pop ones are fun too!

spilled blueberries

Please try to keep your shit together and do not spill all over the table like my messy self did.

berries and champagne

I gave the blueberries a little squish and dropped them in the base of the popsicle molds. I then added some champagne and put these in the freezer.

prepping the boozy popsicles

While you let the bloobs freeze, slice some strawberries. Maybe have a little dinner like I did. Maybe do a little research and find out that cocktail-popsicles are called poptails. Who knew?!

strawberries

Once the tips of the popsicles are frozen, gently place a few strawberry slices in; 2-3 so that there is still room for the stick works best. Then add some grapefruit mimosa that you pre-mixed in a cup. After you finish adding the mimosa, feel free to drink the rest.

getting ready for the freezer

From there, add the sticks and freeze. I left mine overnight and they were completely ready by the following evening.

easy alcoholic popsicles

The next day, you can break these boozy popsicles out for your enjoyment. Or you can wait until the 4th of July to enjoy.  It's your life and you are a smart, strong, beautiful, independent woman and you don't need a man to complete you. I recommend heating the outside of the mold for a moment with your hand before gently tugging on the stick. This helps your delicious treat come out in one piece!

Roomie eating the popsicle

Even my flatemate enjoyed (and was a very good model/sport for letting me take her picture when it was basically hotter than the devil's buttcrack in our apartment. Then again she did get free popsicles and mimosas out of it!).

Berry Grapefruit Mimosa Poptails

Seriously though, look at the festive red, white, and blue! They're so pretty you almost don't want to eat them, but then the grapefruit mimosa calls your name and you have to dig in.

Do you have any special recipes for the 4th, Lush Scouts?

You've been lying, when you should have been truthing,

Easy DIY Succulent Garden: My Weekend Project

Happy Monday Lush Scouts!

Back to work today, sadly, but I have a good feeling about this week. I'm not sure if it the was the excellent weekend with the boyf that put me in this frame of mind, the great projects I worked on yesterday afternoon, the 3-day weekend coming up, or just something the universe is trying to tell me. Regardless, I'm pretty happy about it.

Sadly I killed the beautiful azalea that my boyfriend bought me to cheer me in my darker back-pain days. I'm not sure what went wrong, as I followed all of the instructions exactly. In any case, since the tree was a lost cause, I decided to use the pot to make a little succulent garden.

When I visited Home Depot to pick out plants, however, I ended up with far more than I needed for that pot! I just couldn't say no to all of these little guys! Luckily, I had just finished a candle in a large glass jar, and I was able to get the remnants of wax out to make it into a sweet pot.

As the trick with succulents (besides letting them be kind of standoffish and not over-loving them) is good drainage, I took a trip to Joann Fabrics and to some home decor stones. I filled the bottom of the jar with the larger stones, and then added a few smaller stones on top of that. Since this pot doesn't have a drainage hole, this step is critical. For the other pot with 2 large drainage holes, I sitll added a thin layers of the small rocks along the bottom.

It ended up being a bizarrely dirty process! I had to vacuum twice and shamefully threw plants across the room more than one time. I am sorry plants! Please forgive me!

But the gist of the technique is that I just smooshed the plants in. I had to cut some dirt off to make them fit, but I tried to be gentle with the roots and I hope that I haven't damaged them (besides, they've already been thrown across the room, I'm sure a little smooshing didn't even phase them.)

They turned out pretty lovely. I tried to make a nice mixture of colour and texture, but unfortunately Home Depot didn't have any of the lovely blue and purpley ones or other colours that I saw in my inspirational photos. Alas, the green still looks nice and I think the little gardens really add to my desktop greenery (lavender to the left and basil to the right).

I feel that you can never have too many indoor plants. Especially when living in the city. They purify the air and provide a tranquil green place, both of which help keep my mind clear. For now, they also fill the dog-shaped void in my heart. I'll keep you updated on their progress/survival.

What did you get up to this weekend Lush Scouts? Do you feel as good about the upcoming week as I do? Let me know in the comments below.

Squalor and smoke's not your style,

Heart-y Hand Pies | Fat and Happy

Salutations Lush Scouts! On this, Valentine's day eve, I have a super easy recipe for a treat fit for your man, your friends, or your coworkers. It would also be the perfect companion for a restful evening of Netflix binging. Like all of my favorite Lush Scout recipes, it's easy, breezy, and has minimal ingredients. It's adapted from another Pin (GASP), that links to this original recipe. Without further ado:

supplies needed for heart pies

You need:
Pie Crust
Ricotta Cheese
Cherry Pie Filling
Sprinkles (optional, but also they're sprinkles so TOTALLY NOT OPTIONAL)
Heart Shaped Cookie Cutter

cutting the pie dough

Unroll the dough.

heart shaped cut-outs

Cut heart shapes. An even number is preferable and I found that the store-bought crust reliably provided 6 on first cut and two more after re-flattening with a rolling pin. 5 pies total.

adding ricotta to the pies

Arrange the hearts in pairs and smear with a heaping spoonful of ricotta. Feel free to add more if you really like the idea of ricotta and cherry (it's delish though, so you should definitely be open to liking it). Be sure to leave a wide enough berth around the edge to seal the pies.

adding cherry-filling to the pies

Add the cherry pie filling. I found that creating a mountain of ricotta with a valley in the middle for the cherries (a la mashed potatoes and gravy volcano) worked best.

putting heart pies together

Dip your finger in water (or butter) and run around the outside edge, then add the top piece and seal with a fork. It's okay if a little juice comes out, you can wipe it off before baking.

adding sprinkles

Rub a little water (or butter) on top so the sprinkles will stick.

baking the heart hand pies

I baked the pies on 380º F for about 18 minutes. But that's just my oven and yours might be totally different. The best way is to keep an eye on them, and when the crust is cooked and turning golden brown around the outsides, take those babies out! When they're done, remove from the tray and allow to cool.

finished heart-shaped pies

And that's all there is to it! I managed to whip out about 15 hand pies within an hour. This tutorial also applies to pretty much any other simple cookie-cutter shape, and alternative fillings, and could be used for so much more than this holiday. They would make a nice birthday treat, mother's day delicacy, or accompaniment to finger sandwiches at a tea party. I highly recommend them. I gave some to Gu (so I suppose she could speak as to their quality without bias), and will take some to my man and my coworkers tomorrow! I hope you all have a very sweet Valentine's day, regardless of your plans, and definitely let me know how your pies turn out!

You make loving fun,
Cait

Simple Tomato Sauce | Fat and Happy

Gutentag meine schöne Lush Scouts. I have a recipe for you today that is both simple and extremely versatile: Tomato Sauce (street name: Marinara). It can be paired with noodles, slathered on pizza, mixed with quinoa, used as a dipping sauce (why helloooo mozz sticks) and so so much more. It has very few ingredients and takes very little work (no peeling involved, Scout's honor), making it a perfect Lush Scout recipe. This also means that you know exactly what is in your sauce and there are no crazy dyes, chemicals you can't pronounce, or preservatives; I assume this means healthy! Besides, this bag of tomatoes cost only 1 dollar more than a can of sauce, so it doesn't get any better!

You can throw it in the freezer or eat it up right away. If you know things about canning you could do that too, but I have a healthy fear of Botulism, so I won't attempt that without the proper know-how.

Ingredients for Tomato Sauce

To get crackin' on this delicious sauce, you'll need the following:
Tomatoes (whatever kind you like, and however much you think you'll use)
Garlic (I prefer fresh, but powder would work too)
Italian Seasoning (or a mix of your fave spices Italiano, or some fresh oregano and basil)
Salt
Pepper
Paprika (optional, but I put it in everything)
Carrots (the secret ingredient!)
Olive Oil (I forgot this in the above photo. My bad)

Peeling Garlic for Sauce

Start by peeling your garlic. I probably used about ten cloves (half a head) but this can be adjusted to taste. There's no need to mince the garlic, go ahead and roast them whole.

sliced and cored tomatoes

Next you will need to half and core your tomatoes. I just slice in half and cut a 'v' shape in the middle to remove the core.

tomatoes ready for roasting

Put the tomatoes inside-up on a pan, strategically place the garlic cloves, and drizzle with olive oil. Sprinkle liberally with pepper, paprika, and Italian seasoning. Also add a dash of salt to taste.

tomatoes ready for roasting

Then, into the oven at 400ºF for one hour. Your tomatoes will look all squishy and may even start to blister, but never fear, that's totally normal.

secret ingredient: carrots

While the tomatoes are roasting away, cut up those carrots and sauté in Olive oil.

sauteed carrots for tomato sauce

The carrots add some extra nutrients to the sauce, as well as some needed sugar. Additionally, they help it keep its bright orange/red colour.

ingredients ready to blend

After your hour is up,  scrape the tomatoes, juice, garlic, and carrots into a pot.

blending tomatoes with a hand blender

Here is the messy part: blending the ingredients. I used a hand blender, which as you can tell from the spatter in the above photo, may have gotten a little out of hand. You could just as easily use a food processor or regular blender though.

simple tomato sauce

And then, VOILA!, you have sauce. If it isn't thick enough for your tastes, just put that pot on a burner and simmer it down. This is also the fun part where you get to taste and season. Add as much spices as you feel like. Follow your heart!

easy tomato sauce recipe

I then put mine in, no joke, an old spaghetti sauce jar. I used half of the sauce on dinner, and put the rest into the freezer. When I decide I need it, I'll just put it in the fridge before leaving for work in the morning and let it thaw right out.

That's all there is to it. You can make a lot or just one jar, like yours truly. Add more carrots if you prefer sweet sauce, or maybe experiment with different types of tomatoes. In the summer I'll definitely be playing around with some fresh basil and I'm also thinking of giving some lemon verbena a go. Let me know if you find any incredible combos!

then ride it with my surfboard,

Heavy Rotation

Good evening Scouts! I'm coming to you live from my bed, injured, as I have been all week. It's a sad existence to have a reason to not go to work (my poor messed-up back), and yet be completely unable to do anything interesting (I can barely get across my apartment). It does mean, however, that I've lots of time to listen to music and read, so this week's heavy rotation came to me easily. It really runs the gamut this week, from morose, chilled-out Beck (does anyone else feel like they've been waiting a lonnnng time for a follow up to Sea Change?), twangy Shovels and Rope, absolutely fabulous Sharon Jones (I love her dress in this video), and girl-punk Tweens. And please forgive me for the two songs that also appeared on the Grammys. I SWEAR I HAD THEM ON THIS LIST BEFORE THE GRAMMYS.

1. Be Mean - Tweens

2. Blue Moon - Beck

3. Bad Luck - Shovels and Rope

4. Stranger to My Happiness - Sharon Jones and the Dap Kings

5. Glad - The Wood Brothers

6. Queenie Eye - Paul McCartney

7. Drunk in Love - Beyoncé

your sweetness is killing me,

Friday's Awesome Five

1. The Fox is Black is one of my favorite blogs right now. It is run by Bobby Solomon, who has an eye for lovely and good taste in art and music leaning towards the cutting edge. Plus they really love space suits.I really got hooked on the site when I discovered their clever way to partner with talented artists and designers and bring some talent to a boring-sounding medium: the Desktop Wallpaper Project. Here are some of my favs, but there are about a skillion on the site.

2. I want ALL the stuff! Including this tee from Urban Outfitters. (Any stuff accepted though!)

3. The National's new album Trouble Will Find Me is rocking my emotional socks. I admit, I stumbled upon this while perusing NPR's recent Tiny Desk Concerts (a good way to spend a slow day at work), but I am so happy I did! The video from NPR is surprisingly intimate and honest considering that they're in an office and it looks to be about noon the day after a show. Grab the album and sit by a river or lake with some beer, that's how The National would want it.

4. Taste of Tacoma is going on this weekend! Sorry non-locals, this food-filled-fest right on the GORGEOUS Puget Sound is in Tacoma only, this Friday, Saturday, and Sunday. I've never been before, but I know for a fact I'm gonna love it. And did I mention there's a Wine & Jazz garden??

5. I AM GOING SKYDIVING TOMORROW! 'Nuff said.
